Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Commercial dishwasher in use during inspection and was run twice. Dishwasher had 0ppm chlorine sanitizer detected on the plate after the final rinse both times. Sanitizer bottle is about 1/4-1/3 full. The water temperature is sufficient to wash dishes however the final rinse did not reach temperature for sanitizing.
Correction: A final sanitizing rinse for low temp dishwashers using chlorine sanitizer is to be at least 50ppm chlorine. Correct immediately and if this cannot be done, wash and rinse in dishwasher and then use 100ppm chlorine (1/2tsp plain domestic bleach in 1 liter of water) to sanitize manually until dishwasher has been fixed. Verify chlorine concentrations using test strips.

Follow up inspection:
Dishwasher was serviced and new sanitizer bottle in place. Dishwasher was run and 50ppm chlorine detected on the plate after final sanitizing rinse - good. Check daily using your test strips.
Train staff on written food safety plan and sanitation plan.
Baked goods on counter are protected by a sneeze guard - good.
