Comments

General comments observed during the inspection.
1. Temperature:
-All coolers (under the counter, prep cooler and upright cooler) are maintained at 4C or lower.
-Staff indicated that pearls are used up within 2-3 hours.
-Thermometers observed inside the refrigeration units.

2. Sanitation
-Handsink equipped with paper towel, liquid soap and hot/cold running water.
-Staff demonstrated how to set up the manual dishwashing using the 3-compartment sink. Sanitizer compartment measured to have 200ppm of QUATS.
-Surface sanitizer measured to have 200ppm of QUATS.
-Employees observed to be frequently washing hands.
-Spoons and blenders cleaned and sanitized after use and at the end of the day.
-Ice machine in sanitary condition with scoop stored in designated container.

3. Storage
-All foods were covered and stored off the floor.

4. Pest control
-No pest activity detected.

5. Administrative
-Permit posted in conspicuous location.
