Comments

- Meat/Seafood department maintained in sanitary condition.
- Handsinks were supplied with liquid soap and paper towel. *See violation above regarding paper towel dispenser in temperature controlled area
- Observed frequent handwashing by staff
- Coolers (seafood walk-in, meat walk-in, display) were operating at 4C or colder.
- Automated temperature monitoring in place for cold holding equipment
- Temperature controlled cutting room 5C
- Manual dishwashing method used. Quats sanitizer (200ppm) present from dispensers at warewashing sinks
- Quats sanitizer (200ppm) present in spray bottles for sanitizing food contact surfaces.
- Cutting boards/food contact surfaces appeared clean and maintained.
