Observation (CORRECTED DURING INSPECTION): Under the counter cooler on the cook line was found at 16c.
Corrective Action(s): This cooler must at 4c or below at all times. Eggs and tomatoes were put on ice during this inspection.

Do not use this cooler until temperature has reached ideal conditions.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Nail brushes were not found in sanitizer.
Corrective Action(s): Operator confirmed that nail brushes will be stored in sanitizer. Sanitizer is to be changed on frequent basis. Quat sanitizer at 200ppm concentration.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): The following handwashing stations were missing paper towels:
1. Employee bathroom
2. Second handwash sink on cook line
3. Handwash station in bar area
Corrective Action(s): Operator replaced and refilled all paper towel dispensers.

Observation (CORRECTED DURING INSPECTION): Walkin cooler missing thermometer
Corrective Action(s): Operator placed new thermometer in walkin during this inspection.

Comments

Handwashing stations were found to have hot/cold running water and liquid soap. Paper towels were available at all sinks except the above (see violation).
All coolers were found at 4c or below except see above violation.
All freezers were found at -18c or below.
All hot holding units were found at 60c or higher.
Dry food storage was in good sanitary condition.
Dishwasher reached 100ppm concentration for sanitizer cycle.
Glasswasher at 12.5ppm concentration
Quat sanitizers were at 200ppm concentration.
Ice dispenser was in sanitary condition.
All employees observed to have uniforms and hair restraint in place.
Cleaning schedules, food temperature logs and daily records were available.
