Observation: Various buckets of quats sanitizer in the kitchen measured with a concentration of less than 50 ppm. 200 ppm is required to properly sanitize any food contact surfaces.
Corrective Action(s): Discard and refill the sanitizing bucket at the dispenser with 200 ppm quats sanitizer. Air gaps observed in the line of the sanitizer stock bottle. Ensure staff prime out the air gap before refilling the buckets. Use test strip on site to verify the concentration daily. Clean and sanitize food contact surfaces in the kitchen with freshly made quats sanitizer.

Observation: Discussed the cooling procedures for a tray of soup with the director. Director unable to provide the required time and temperature for the cooling of soup. Upon asking for the food safety plan, director was not able to provide updated food safety plan to the Environmental Health Officer (EHO) during the visit and stated the plan will be send to the EHO by email later.
Corrective Action(s): Provide an updated food safety plan to the Environmental Health Officer and ensure a copy is on site for staff to review. Correct by: Nov 28, 2022.
