Routine Inspection:
Hand washing stations fully equipped with liquid soap, paper towels and hot/cold running water.
All temperatures met health requirements:
- Coolers (all under-counters, drawers, stand-up, 3-door stand-up, prep) maintained at or below 4 degrees Celsius (40 degrees Fahrenheit).
- Freezers (front and 3-door stand-up) maintained below -18 degrees Celsius (0 degrees Fahrenheit).
- Hot holding for soup maintained above 60 degrees Celsius (140 degrees Fahrenheit).
All cold holding units equipped with thermometers.
Prep sink at front equipped with hot/cold running water.
Ice maker maintained in a sanitary condition.
Cambro ice bin maintained in a sanitary condition. Ladles used as scoops for ice stored in a designated plate on top of ice bin.
3-compartment sink available for manual warewashing and set up properly at the time of inspection.
- Concentration of QUATs sanitizer in sanitizing sink = 200 ppm.
- Concentration of QUATs sanitizer at dispenser = 200 ppm.
- Drain plugs available and in use.
Concentration of QUATs sanitizer in bucket = 200 ppm. Wiping cloth stored in sanitizer solution - very good.
General food storage practices good:
- Food covered and protected from contamination.
- Food stored at least 6 inches off the floor.
- Dry storage organized.
Equipment storage and cleanliness very good.
No signs of pest activity at the time of inspection.
