A routine inspection was completed:
- Coolers 4C or colder; freezers -18C or colder; thermometers present; and temps checked daily.
- Glasswasher had [Cl2] between 50-100ppm.
- High temperature dishwasher had rinse cycle temperature of 75.5C at the plate's surface as per max/min thermometer.
- Quats sanitizer in spray bottle had strength of 200ppm.
- Foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with raw proteins separate or below RTE foods; and foods stored 6" off the floor on shelves or platforms.
- No expired foods in use. FIFO rules being followed.
- General sanitation level is good. Exhaust system professionally cleaned in August 2023, next service due in February 2024 as per service sticker. Deep cleaning done 2x a month.
- No signs of pests. Professional company monitors premises 2x a month.
- Valid, FoodSafe certified staff present.
ACTION:
- Ice scoop, in ice machine (in front bar area), shall not be stored in the ice bin as staff will contaminate the ice when they grab the scoop. The ice scoop shall be stored outside the ice bin, in a clean container.
- There are some baseboard tiles that have fallen off the wall, by the mop sink, this is creating an opening into the wall void which could allow pests in. Repair and seal the wall so it is durable, smooth, sealed, and cleanable. |
