Observation (CORRECTED DURING INSPECTION): Quats spray bottles (front/kitchen) had 400ppm Quats measured. Refilled with 200ppm Quats at this time.
Corrective Action(s): Ensure the sanitizer bottles are filled with 200ppm Quats. Use the test strips available on site.

209 - Food not protected from contamination [s. 12(a)]
Observation: 1) Few opened can foods observed in coolers (prep cooler in kitchen corner - by the chest freezer on the right and in walk-in cooler).
2) Scoop for ice machine placed directly above the machine. Placed in the dishwashing sink at this time.
3) Plates observed in some of the dry storage bins at the back.
Corrective Action(s): 1) Ensure all can foods are transferred to food grade containers once opened to prevent chemicals leaching into food.
2) Scoop should be stored in a sanitized container, not directly above the machine.
3) If to store scoops inside these bins, obtain proper scoops with handles and have them stored in a manner that the handles are not in contact with food. Otherwise, do not store them in these bins.

Comments

Routine inspection conducted:

-Handwash stations adequately supplied with liquid soap, paper towels and hot/cold running water.
-Coolers operating at/below required temperature of 4'C; Freezers operating at/below required temperature of -18'C.
-Hot-holding units operating above 60'C. Temperature monitoring system in place.
-Ventilation canopy hood due for professional cleaning on Dec 10, 2019.
-General food storage practice is satisfactory other than mentioned above.
-Professional pest control company contracted for regular visits. Report to be emailed to the health inspector.

General sanitation of the facility satisfactory, but can be improved by cleaning hard to reach areas on a more regular basis (i.e. floors under dishwashing machine and shelves in the back storage room).
