*Ensure quats sanitizer strength is maintained at 200 ppm.
*Ensure dishwasher final rinse temperatures are recorded daily as "dishwasher" not "sanitizer".
*Recommend replacing small white cutting board which has excessive knife marks causing it to be difficult to clean.
