- Hand washing sink accessible/unobstructed and properly supplied with hot and cold running water, liquid soap, paper towels.
- Quat sanitizer for food-contact surfaces available at 200 ppm in designated spray bottle.
- High-temperature dishwasher reached 74C at the dish surface during final rinse. Good, minimum of 71C at the dish surface required.
- Cooler measured 2C.
- Freezer measured -19C.
- Chef was preparing for lunch service. Cooked soup for lunch service was held at 60C or hotter prior to being served.
- Accurate thermometers available. Temperature log available and up to date.
