Observation (CORRECTED DURING INSPECTION): Not enough chlorine concentration was detected in all sanitizer bottles/bucket. The operator re-made the sanitizer at the time of inspection.
Corrective Action(s): Ensure to prepare sanitizer fresh daily as the chlorine dissipates over time.

Comments

- Handsinks are equipped with hot & cold running water, liquid soap & paper towels
- 100ppm chlorine detected at final rinse cycle in the glasswasher
- Low temp dishwasher in the kitchen failed to produce adequate chlorine concentration initially. The operator switched sanitizer bottle at the time of inspection and >50ppm chlorine residual was detected at plate's surface. **Ensure to check the sanitizer level daily and keep a record.
- Temperatures of all refrigeration units are adequate (<4C coolers, <-18C freezers)
- Refrigeration units are equipped with working thermometers
- Temperature log is up to date
- Foods are stored in a manner that is protected from contamination (covered, away from raw protein, lifted off of floor)
- Pest control service received on a monthly basis
- No signs of pest infestation noted at the time of inspection
- FOODSAFE trained staff present
