Routine Inspection
-Ambient air temperature of dairy and cooler started at 9 C and then dropped to 6 C. Temperature between food products registered at less than 4 C.
**Temperature kept dropping during the inspection. Ensure the ambient air temperature of the cooler is at 4 C or below in the next hour. If temperature does not drop to 4 C or below, please adjust/repair the cooler.
-Upright freezer below -18 C or below.
-Ice cream freezer below - 18 C or below.
-Walk in cooler at 4 C or below.
-All items come prepackaged.
-Hand sink at coffee station equipped with hot and cold water, liquid soap and paper towel.
-Two compartment sink available for dishwashing. Discussed how the proper way of manual dishwashing. Use Quats as per manufacturer's recommendations.
-Coffee urns cleaned with TABZ followed by a rinse and sanitizing step - good.
-Facility kept in a clean condition.
