Observation (CORRECTED DURING INSPECTION): Quats sanitizer in the spray bottle was too concentrated 400ppm or above. Must be at 200ppm to be safe. Rolls of test strips were avalable however staff did not know how to use them.
Corrective Action(s): Follow manufacturers instruction for diluting the chemical. Check with test strip and record daily.

Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Workers were hosing down the processing room with water. No evidence of sanitizers being used. When asked, the worker stated that they mix detergent with sanitzer for cleaning food contact surfaces. This is contrary to proper cleaning and sanitizing procedures.
Correction: Ensure workers are aware of and are implementing proper cleaning and sanitizing procedures for food contact surfaces, even when managers are away. Post instructions outside the room.
