Walk-in cooler repaired. ambient temperature measured 3 degrees C BOH foods now covered with lids - good Temperature monitoring sheet on site for month of October. Keep completed sheets for 6 months for inspector to check Discussed handwashing procedures with staff. Also discussed keeping doors on hotholding unit. Similar future infractions may result in the issuance of closure orders and/or violation tickets.
