Sauces were stored in ice bath in large metal insert at time of inspection.
Remaining of the bulk sauces were stored in the upright cooler.
Discussed that tom yum and laska are the two sauces that require refrigeration as per VCH inspector. Please remind all staff.
Cilantro stored in food grade plastic bags.
VCH inspector also followed up on cilantro with noted supermarket.
Rehydrated noodles and cut cabbage were in small amounts with a bag of ice inside container.
Discussed to place bagged ice so that all cabbages can be exposed to ice or use ice water bath.
Bubble waffle station liners removed from wall and cleaning completed.
No food stored on the floor and no food being thawed at time of inspection.
Dry storage maintained but still a few mice droppings noted. Recommend placing a snap trap on the floor to the wall.
Cracked tile in oven has been replaced.
