The bar glass washer final rinse sanitizer residual measured zero. The residual must always measure at least 50 ppm Cl.
Corrective Action(s): Service the dishwasher and have the booster temperature adjusted to achieve a consistent final rinse temperature of at least 71 C in the cavity. Service the bar glasswasher to achieve a final rinse sanitizing residual of at least 50 ppm Cl.

Observation (CORRECTED DURING INSPECTION): The front bar hand wash sink did not have paper towels in a dispenser. Single-use paper towels must be provided in a dispenser at all hand wash sinks.
Corrective Action(s): Paper towels in a box-type dispenser were placed at the bar hand wash sink.
