Handwashing sinks well equipped with hot and cold running water, liquid soap, and paper towels.
QUATs dispenser and spray bottles at 200ppm. 2-compartment sink available.
Prep coolers, walk-in cooler, and stand-up cooler measured at 4C or lower. Under counter freezer, chest freezer, walk-in freezer measured at -18C or lower.
Food observed to be stored at least 6 inches off the floor. Ice machine in sanitary condition.
Ice machine observed to be in sanitary condition.
Underneath the cookline, prep coolers observed to be satisfactory. Ensure to have daily and thorough cleaning underneath hard to reach areas. Exhaust hood vents observed to be satisfactory, however, warrant cleaning at end of day. Operator informed exhaust hood vents are cleaned on a weekly basis. Increase frequency to prevent further grease build-up.
The following violation in report#JCHY-CTER4W has been corrected:
-Exposed wood shelving unit near the men staff washroom observed to be sealed.
NOTE: Dry storage racks in the dry storage area will require re-surfacing soon to ensure it is non-porous and easily cleanable.
