Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Food carts gasket-like components have dark accumulations, formations that resemble mould.
The interior surfaces of the carts have various residues.
Cart internal tray holding structures are not removed when carts are cleaned causing in-effective cleaning, this may be the cause of some of the residue.
The internal aspect food carts lack effective cleaning, disassembly is required.
A lack of effective cleaners for the task of heavy duty cleaning, and or a lack of information on materials on hand
Correction: Thoroughly disassemble internal tray holding structure and components, scrub, wash, clean with the proper cleaning agent or agents as required to remove dark matter and debris. Once cleaned disinfect the apparatus.
Consult manufactures procedures on cleaning and recommended cleaners.
Consult hospital cleaning chemical agent supplier for direction on available options and cleaning equipment that would make the task more effective and efficient.

Clean the residue accumulations in the carts, this includes walls, ceiling and floor of units.

The clean practise of food carts most likely will require disassembly to prevent conditions as observed.
The overall process of cleaning should be reviewed.

Follow up inspection to the Routine Inspection conducted on March 27, 2019.

Steritech-Rentokil has inspected the kitchen and added more snap traps.
Some areas of the kitchen and dry storage areas have been cleaned by house keeping
Ostro San sanitizer strength has been adjusted by the chemical supplier to 200 ppm, however the sanitizer monitoring log sheet has not bee revised yet.
Thumb tacks have been removed from the bulletin board near the vacuum sealer machine. Good.
Requisition has been made to install FRP panels up to 4 feet high in the dry storage room

However, the following corrective actions are still outstanding and must be completed by the dates specified.

1. Install or replace weather -stripping underneath the receiving area doors and loading doors near the mail room ( April 6, 2019)
2. Recommended more bait stations on either side of the kitchen receiving doors as some rat dropping were noticed along the wall on receiving dock.
Also recommended more rodent monitoring devices underneath the 3 compartment sink and in dishwashing areas.
3. Remove all equipment and old furniture stored behind the chain-link fenced area as this could act as rodent harborage ( By April 15,2019). Clean all debris from the
loading/receiving area dock.( April 15, 2019)
4.All shelving and equipment throughout the dry storage room and kitchen must be moved for a thorough cleaning of the floors especially along the floor-wall junctions.
Mice droppings were still visible underneath shelving and other hard-to-reach areas.(March 31, 2019).
5. A detailed itemized cleaning checklist must be developed specifically for kitchen and dry storage areas. The list should be initialed by the sanitation supervisor. ( April 5, 2019)
6.. Dust and debris build up noticed behind the locked chemical storage rack. Move the rack for proper cleaning of the floor under and behind the rack.
7.Replace the storage shelf near the decommissioned walk-in cooler with a shelf with wheels. ( March 31, 2019).
8. Remove build up of dry food and food crumbs from underneath the conveyor belt in tray room ( March 31, 2019).
9. Seal or patch a hole in the wall and gap between the ceiling tiles in clean apron storage area near the entrance
10.Remove mouldy and worn-out silicon caulk from the baseboards along the dish washing area
