A routine inspection was completed, the following observations were made:
- Coolers 4C or colder; freezers -18C or colder; hot holding units above 60C; thermometers present; and temperature recorded 2x a day.
- High temperature dishwasher had a rinse cycle temperature of 81C at the plate's surface, as per max/min thermometer. Temperature recorded daily with waterproof thermometer.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Quat sanitizer in spray bottle and in cloth buckets had 200ppm strength. Test strip present and used.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with protein below RTE foods; and foods stored 6" off the floor on shelves, racks or in cupboards.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good. The exhaust canopy and hood is clean. Next scheduled professional cleaning is in July 2022, ensure to book the cleaning.
- No signs of pests.
- FoodSafe certified staff present.
- All surfaces are in good working order. A few wall tiles have fallen off and there are dents in the wall paint behind a storage rack, however these currently do not affect the safe storage of food or cleaning of these surfaces. If these damaged surfaces start affecting the health and safety of food storage or cleaning, repairs will be required to be done.
