Observation (CORRECTED DURING INSPECTION): **REPEAT** No sanitizer is measured in water of Low temperature mechanical dishwasher after running cycles. This is likely due to the sanitizer source being depleted. A quick test strip showed that the sanitizer had around 200ppm (did not bleach out test strip).
**Corrected during inspection** Facility is to switch to manual dishwashing method using 2 compartment sink.
Ensure sanitizer is at appropriate concentration (100-200ppm bleach). This is made mixing 1 tbsp household unscented bleach to 1 gallon (US) water.

Once dishwasher is corrected, maintain dishwasher sanitizer conentration log. Measure using test strips (can be purchased from chemical supplier) and record findings daily.

Observation: 1. **REPEAT** Build up of grease observed around cooking line, between and behind large appliances (e.g. deep fryer), and central range hood filters.
2. **REPEAT** Build up of food debris observed on magnetic knife holder next to butchers block and shelving beside deep fryer.
Corrective Action(s): 1, 2. Clean, degrease, and sanitize all areas identified. Frequency for cleaning will need to be increased based on observed build up.

Observation: Sanitizer not detected after running cycle on low temperature dishwasher, likely due to sanitizer solution used not being strong enough (measured around 200ppm from bottle; did not bleach out test strip).
Corrective Action(s): 1. Switch to 2 compartment sink hand washing method. Ensure sanitizer is at appropriate concentration (100-200ppm bleach). This is achieved mixing 1 tbsp household unscented bleach with 1 gallon (US) water.
