Observation (CORRECTED DURING INSPECTION): Sanitizer spray bottles had 0ppm chlorine. Bleach was added by the operator to prepare 200ppm chlorine at this time. Operator was advised to have all counter/prep surfaces sanitized using this solution.
Corrective Action(s): Ensure all staff are trained to add 1/2 tsp of bleach per 1L of water to prepare the correct concentration of sanitizer.

Routine inspection conducted:

-Handwash stations adequately supplied.
-Refrigeration temperatures satisfactory. Thermometers available.
-3 compartment sink satisfactory. Bleach and sink plug available for manual dishwashing.
-Dough mixer washed/sanitized every use.
-General storage practice satisfactory.
-Professional pest control company contracted for monthly visits. ATLAS
-Traps in place. No evidence of pest activity observed at this time.
-Washroom satisfactory.

General sanitation of the front area is very good, but the kitchen (i.e. shelves, floors) and back storage area, including inside walk-ins/freezers require improvement. Ensure to clean these areas on a more regular basis.
NOTE: Operator is taking a Foodsafe Level 1 Refresher course on Tuesday, June 11th.
NOTE: Back storage room not in use at this time. Operator has advised this room has not been in use for few months now. OK for now.

Operator wants to start offering High Tea Menus for customers. The following was discussed:
Mechanical dishwasher is required to have >10 seats.
Food Safety Plan for High Tea menu items, as well as
Sanitation Plan for High Tea dishware/utensils should be submitted and approved.
Back room should be cleaned and organized to allow more storage space.
