Observation (CORRECTED DURING INSPECTION): Cooked eggs and raw prepped breaded pork cutlets (four large containers) stored at room temperature for indefinite periods of time. It was well after lunch and well before dinner.
CORRECTED DURING INSPECTION - items returned to cooler unit.

Corrective Action(s): Do not leave potentially hazardous food items out at room temperature for indefinite periods of time. Once prepped for meal service these items are to be returned to cooler units until such time as they are to be cooked.
They are not to be left out at room temperature for hours during or prior to lunch rush.

Observation (CORRECTED DURING INSPECTION): Sanitizer solution made on site without testing papers. Staff had no way of knowing if sanitizer solution was made as per manufacturer's concentration. Sanitizer solution is new as of 2 weeks ago. Facility has not provided testing strips for the new sanitizer for staff to use.
CORRECTED DURING INSPECTION - Bleach sanitizer solution was made on site and tested with EHO testing strips.

Observation: Three compartment sink is not fully draining. Sinks appear to have clog and not draining.
Plumber is to arrive in 1.5 hours.

FHA to follow up tomorrow to ensure repairs have been made. Sink is to freely flow to allow for ease of dishwashing.

NOTE: As facility does not have an ice machine ensure water for rice paddle baths are changed every 30 minutes or more.
