Observation:
- Ice machine observed with biofilm forming on the ends of the ice making panels. Debris observed in the bottom corners.
- Knife holder inside the kitchen (Attached to prep cooler) observed with food debris build up.
Corrective Action(s):
- Clean and sanitize the knife holder. Clean and sanitize the ice machine after turning the machine off and all ice is taken out.

Observation:
- Rodent droppings observed throughout the premises: along the bottom shelves at the sushi bar, along the wall perimeters inside kitchen, inside dry storage room and equipment room.
- Overstocking observed inside walk-in cooler and freezer.
- Food debris observed on floor inside walk-in cooler, walk-in freezer, slide-door cooler
- Dust build up observed on the fan inside walk-in cooler and slide-door cooler.
- Sticky residue on the doors of the slide-door cooler.
Corrective Action(s):
- Clean the areas noted above. Ensure to wipe all sufaces affected with rodent droppings with bleach sanitizer.
- Organize the walk-in cooler and freezer. You should be able to "walk in" inside these units.
- Deep cleaning is required throughout. Ensure to clean all hard-to-reach areas and corners.

- All coolers at 4C or below.
- All freezers range from -6C to -20C.
- Hot held rice and soup at 60C or above.
- Bleach sanitizers available in buckets and in spray bottles measured at 200ppm.
- High temperature dishwasher reached 71C or above during the final rinse.
- Ventilation hood panels in sanitary condition.
- Back door was open but door screen in place - good.

* Weekly pest control service by ABELL Pest Control company. Most recent report dated 23-FEB-2023 indicates no catches/pest activity. Feb 16 report indicated 3 mice catches and Feb 2 report indicates 1 mice catches. Ensure to follow instructions regarding sanitation and structural issues listed in the report. This will be checked during the follow up inspection.
