Temperature monitoring record kept and updated. - Hot holding procedure for pizza and chicken wings discussed. Internal cooking temperature for chicken wings measured using probe thermometer. Thermometer calibration discussed. - Quat sanitizer 200-400 ppm available in spray bottles and in sanitizer dispenser at 3-comp sink. - Dishware washing procedure discussed. Implements air dried and stored properly. - No obvious sign of pest activity observed at this date. Pest management plan has been implemented. - Staff are food safe trained.
