*Clean the wall near deli area sinks to remove dust etc. * Recommended placing a barrier between the back-flow prevention assembly and stored food items in both walk-in coolers. Hot holding of soups, whole chickens and chicken nuggets above 60 degrees C. Sandwich coolers below 4 degrees C. Deli display coolers below 4 degrees C. Upright stainless steel coolers maintained at 4 C or below. Walk-in coolers below 4 degrees C. Quats sanitizer at the dispensers and in spray bottles tested 200 ppm. Liquid soap and paper towels available at the hand sinks. Probe thermometers in use to check internal temperature of foods items. Staff wear hair nets and clean aprons. General sanitation is satisfactory.
