2: when thawing meats/seafoods store the foods in plastic bags to protect from contamination (CORRECTED DURING INSPECTION)

3: all raw meats/seafoods/eggs must be stored below other foods to prevent possible contamination of foods underneath (CORRECTED DURING INSPECTION)

Temperature Controls:
All fridges must maintain foods at or below 4 deg C:
-1-door display fridge 3 deg C (pops)
-preparation cooler 4 deg C (vegetables)
-3-door display fridge 3 deg C (meats)

High temperature hot water sanitizer must be >82 deg C as per thermostat:
-was unable to check washer as it was turned off -will check for the follow-up inspection

Chemical Controls:
Bleach sanitizer buckets must be maintained >100ppm as per test strips:
-checked and verified

Reused wiping towels for food contact surfaces maintained in sanitizer buckets when not actively used

Daily tracking sheets maintained for fridge, and mechanical washer

General Sanitation
-all goods maintained off the floor >15cm to facilitate cleaning and monitoring pests underneath
-no signs of pests -live traps being used for monitoring

Notes:

-reminder: Windex for cleaning the glass tables is not a substitute for your bleach sanitizer -you must be using the sanitizer to effectively remove bacteria from surfaces

-near the end of the inspection a power outtage occurred (approximately 330pm) for the entire block of stores -operator was directed on proper procedures during power outtages and provided with the guidance handout
Handsinks well stocked single service drying method, soap in a dispenser, hot/cold water and clear for access

-No pooling eggs observed -operator is not to pool eggs for storage -as soon as eggs are cracked open they must be cooked for immediate use -information will be emailed to operator for additional guidance material
