Comments

The following issues identified in previous routine inspection report have been addressed:

Code 305: Gap at screen door which was creating a potential entrance point for pests is no longer present.
Code 306: Exhaust canopy has been cleaned/serviced. Decal present indicating next service is Dec. 19. Ensure exhaust canopy is cleaned/serviced at required intervals.
Code 308: Wash gauge on dishwasher has been fixed. It was reading 150F which is temperature specified on machine.

The following issues are outstanding and need to be addressed:
308: Walk-in freezer gauge was reading -8C and surface temperature food product measured -8C. Temperature of freezer should be -18C. Operator reported a technician had been on-site; however, did not provide a service report. Operator contacted a technician at the time of the inspection. Submit copy of service report by email which confirm freezer has been serviced/repaired and is operating at -18C.

Code 304: Mouse droppings had been cleaned; however additional droppings were noted behind prep table near back exit and under dry storage area. This was cleaned and areas sanitized at the time of the inspection. Do not use a mop for cleaning up mouse droppings at this scatters the droppings. Use a damp cloth (designated for this purpose) or damp paper towel. Monitoring for droppings and cleaning/sanitizing areas must be completed daily. Additionally a high level of sanitation must be maintained to eliminate potential food sources from spilled food.
Copy of most recent pest control service report submitted via email. Report is from Aug. 1/19. As there is ongoing pest activity noted, a pest control contract with a minimum of monthly service is needed. Submit copy of contract and service report for September. Ensure recommendations from Pest Control Technician are followed and any entrance points are eliminated/sealed.
