Observation (CORRECTED DURING INSPECTION): * Some chowder was found to be at 14'C in a bucket in cooler; this product was made yesterday and had been in the danger zone (4'C-60'C) for many hours (ie. since yesterday); product was discarded immediately
Corrective Action(s): * Ensure ALL perishable foods are cooled properly after cooking process completed; perishable foods to be cooled quickly (eg. in ice bath and shallow containers) and checked with thermometer to ensure cooling process working properly-- then food to be stored at 4'C/40'F or colder in cooler unit

Observation: * Build up of grime/debris found through out both kitchen areas under food equipment, walls, baseboards, etc., that requires regular maintenance and consistent monitoring to maintain sanitary conditions; Also, ice machine by liquor walk-in cooler was dirty inside with biofilm/filth evident along filter area-- operator to empty this unit, discard ice and clean/sanitize inside the unit weekly and ensure proper maintenance
Corrective Action(s): * Ensure ALL areas properly cleaned/sanitized and maintained in sanitary condition including ice machine too

Observation: * Upright freezer unit compressor cover was broken and requires repair so that it is in proper working order

Observation (CORRECTED DURING INSPECTION): * Staff with facial hair were handling food and this can lead to cross contamination of food being prepared; staff with facial hair put on beard/hair nets

* Dishwasher final rinse in back kitchen was 74'C/165'F or hotter internally; wall under dishwasher was repaired
* Cold-holding units were 4'C/40'F or colder
* Hot-holding units were 60'C/140'F or hotter
* Glass washer at bar had final rinse of 50 ppm chlorine residual; monitoring records were available for this and up to date
* Hand washing stations had liquid soap and paper towels
* Sanitizer was available at work stations; ensure proper concentration available (eg. 200 ppm quaternary ammonium); operator changed solutions where concentration not adequate
* Freezer units were -18'C or colder
* Note: cooling process to be readdressed with food handling staff as some product had been improperly cooled and had to be discarded
* Note: cleaning to be done through out facility as build up of grime/debris noted again
* Food safe level 1 renewal to be every 5 years
* Follow up inspection to be done next week
