Observation (CORRECTED DURING INSPECTION): Quats sanitizer solution in both buckets in front area measured to have less than 200 ppm Quats.
Corrective Action(s): Sanitizer solution must be at 200 ppm; ensure solution is refreshed every 2-4 hours, or sooner if the solution becomes visibly cloudy or dirty. Use test strips to monitor concentration of sanitizer.

- Hand sinks supplied with hot and cold running water, liquid soap, and paper towels
- Three compartment sink available for manual warewashing. 200 ppm Quats detected in sanitizing sink compartment - ensure solution is changed every 2-4 hours.
- All coolers were measured to be at or below 4C
- All freezer temperatures satisfactory
- Accurate thermometers available

*Note: Ensure band saw in meat cutting area (out at room temperature) is cleaned and sanitized every 4 hours at a minimum if used continuously.
- Meat grinder stored in walk-in cooler is cleaned and sanitized at the end of each day or after each different type of meat - OK.
