Comments

Routine inspection conducted with the presence of concession management staff. Lower concession was under renovation in summer to replace the floor. No change in food menu.

- No food processing at the time of inspection.
- Hand sink at the front area was equipped with hot and cold running water, hand soap and paper towel.
- Upright coolers, drinks and beverage cooler and under the counter cooler were measured at less than 4C
- Freezers measured at temperature at -12 ~ -16C. Chicken strip was solid frozen.
- No food in hot holding unit, the unit temperature reached 63.2C.
- Two compartment sink available at the back for dishwashing. Instruction given on how to make 100ppm bleach sanitizer in the 2nd sink to sanitize tongs, scoops and other kitchen tools.
- Sanitizer solution in spray bottle is measured at 100ppm chlorine residual.
- No evidence of pest activity observed during inspection.
- FOODSAFE Level1 staff was onsite for every shift.

Corrective actions required: (1) prepare probe thermometer to measure internal temperature of fried chicken strip and sausage, make sure to reach 74C.
(2) replace the mop holder on the mop sink, hang mop for air dry to prevent flies infestation.
