301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: 1) Ice machine at bar had biofilm built up in the upper region. These conditions allow for microbial growth that can contaminate the ice.
Corrective action: discard ice in ice machine. Deep clean/scrub the interior. Sanitize using bleach solution (100ppm Chlorine).
Allow it to air dry. *Ensure regular cleaning of unit.

2) Ventilation system past placard required cleaning date (Feb 2023). These conditions impose a fire hazard in addition to the risk of cross contamination of food due to grease/food debris falling back into food.
Corrective action: Deep clean the ventilation unit by professional company. Ensure monitoring/scheduling of regular deep cleaning.
3) Fans inside beer walk-in cooler had significant dust accumulated. Risk of cross contamination of drinks/food stored inside unit.
Corrective action: Deep clean the fans in the walk-in beer cooler.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Soiled rags containing significant amount of food particles were observed on all food prep counters. These conditions may allow for microbial growth which may then cross contaminate other surfaces.
Corrective action: soak all cleaning rags inside a sanitizer solution (Chlorine @ 100ppm by combining 1/2 cap of bleach with 1 bucket of water). Change the solution at most every 2 hours or as needed.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Handwash sink in kitchen was obstructed by pot of eggs cooling inside sink. The paper towel dispenser was also empty. Adequate and easy access to a handwash sink eqiuped with hot/cold running water, soap, and paper towel is required to allow for good hand hygiene.
Corrective action: Remove obstruction from inside sink. Refill the paper towel dispenser.

Observation: 1) Raw meat stored directly above ready to eat vegetables.
2) Several food items (eg. cracked eggs, sauces, etc.) were uncovered inside display reach in cooler.
*These conditions may result in the cross contamination of raw/ready to eat food items that will not be cooked.
Corrective action: ensure all raw meat/chicken/seafood is stored below OR away from cooked and ready to eat food items.

Observation: 1) Gap observed under emergency exit door near customer bathrooms. The back door to the kitchen (down the hallway) was observed open.
2) Hole observed under bar sink. Gaps around pipes in kitchen.
3) Boxes were placed on the floor in the hallway.
4) Some packs of dry goods were open --> not inside pest proof containers.
*The above conditions may allow for the enterance, attraction, and harbourage of pests.
Corrective actions: 1) place door sweep under exit door.
2) Fill hole at bar and gap around fixtures in kitchen area.
3) Ensure all boxes are > and/or = 6'' above floor.
4) Ensure all open dry goods, such as sugar, flour, etc are stored in pest proof containers when not in active use.
