Cooling units less than 4 C. Prep cooler top inserts at 4 C. Hot holding above 60 C. Double cooking for donair observed. Good. Freezers below -18 C Quats in third dish sink at 200 ppm handwash stations stocked. Raw chicken donair marinating on bottom shelf of both cooling units - away from contamination. Good. Make sure to sanitize base of cooler insides when chicken removed for cooking etc. Facility looks good at time of inspection.
