301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): No food grade sanitizer was available on-site at the time of inspection. Staff were using Lysol and Clorox for sanitizing food contact surfaces. Both chemicals require a potable wash step after sanitizing surfaces - solution is not food grade.
Corrective Action(s): Food grade sanitizer such as bleach at 100ppm to 200ppm or Quats at 200ppm are required to sanitize food contact surfaces after each use. Use of non-food grade chemicals may result in chemical contamination of foods. Bleach at 100ppm was prepared at the time of inspection. To prepare 100ppm to 200ppm bleach, add 1/2 teaspoon (2.5mL) bleach per litre of water

Observation (CORRECTED DURING INSPECTION): Quats sanitizer dispenser has not been installed and staff unable to describe sanitizing process using manual warewashing.
Corrective Action(s): Until the sanitizer dispenser is installed, manually warewash using a bleach sanitizer solution at 100ppm to 200ppm. 3-compartment sink will require approximately 8 caps of bleach

209 - Food not protected from contamination [s. 12(a)]
Observation: 1) Artichoke hearts were stored in an opened metal can and covered with paper towels. Black material leeched from the can seal to the paper towel.
2) Scoop was stored inside the flour container.
Corrective Action(s): 1) Once canned foods are opened the contents must be transferred to food grade containers with properly covers to prevent potential contamination of foods. Artichokes were discarded at the time of inspection.
2) Ensure scoops are stored in a sanitary manner to prevent potential contamination of foods.

Observation: 3-compartment sink and secondary handwash station drainage pipe is blocked.
Corrective Action(s): Contact plumber to service plumbing to ensure sinks can drain properly and equipment and utensils can be properly washed and sanitized in the 3-compartment sink. Plumber is coming this afternoon.

Comments

-Walk-in cooler was at 4C.
-Pizza prep cooler was at 4C (top and bottom).
-Upright freezers were less than -18C.
-Chest freezer was at -22C.
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels. Staff member observed practicing good handwashing and glove use practices at the time of inspection.
-Manual vegetable slicer was found to be clean and sanitary.
-General sanitation good at the time of inspection.
-No signs of pest noted at the time of inspection.
-Washroom clean and sanitary. Handwash station supplied with liquid hand soap and single use paper towels.
-FOODSAFE Level 1 valid until October 12, 2024.
