- All coolers at < or = 4C
- All freezers at < or = -18C
- Working thermometers in each refrigeration unit.
- Temperature log must be kept up to date.
- Random food items (i.e. dairy products, meats) checked for expiration dates, condition of packaging, and any signs of deterioration. All in good condition.
- No signs of pest activity at the time of the inspection.
Note: Ensure that all doors to the walk in cooler are closed completely at all times to maintain temperature < or = 4C. Begin daily temperature logs.
