Observation (CORRECTED DURING INSPECTION): Raw meat was stored above cooked meat in both the under counter cooler and walk-in cooler.
Corrective Action(s): Ensure raw meats are stored below ready-to-eat foods to prevent potential contamination of foods. Raw meat was relocated at the time of inspection.

Comments

Walk-in cooler was at 4C.
-Prep cooler was at 4C (top and bottom).
-Under counter cooler was at 4C.
-Upright freezer was at -14C.
-Chest freezer was at -12C.
-Donair meat is shaved off the roasting oven, and cooked on the grilled, followed by cooling is shallow layers.
-Cooked potentially hazardous foods were cooled rapidly and at 4C.
-Chicken and beef reheated to greater than 74C.
-Hot holding was greater than 60C.
-High temperature dishwasher had a final rinse temperature of 71C on the dish surface (minimum 71C required for proper sanitizing).
-Bleach sanitizer spray bottles labelled and tested at 200ppm.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary. Handwash stations equipped with hot and cold running water, liquid hand soap, and single use paper towels.
-FOODSAFE Level 1 valid until April 1, 2022.
