Observation (CORRECTED DURING INSPECTION): Display cooler measure 9-11C ambient temperature at the start of the inspection.
Yogurt, sandwiches, salads was stored in this display cooler.
Corrective Action(s): Two yogurts has been discarded as staff say it has been in side for over four hours.
All other product has been removed to working cooler as staff prepared it within a hour ago.

Observation (CORRECTED DURING INSPECTION): Bagged soup observed thawing under running water, but was not fully submerged as the container is not big enough.
Corrective Action(s): Please ensure the entire bag or product is fully submerged and under cold running water or thaw in cooler.
Staff placed the bag of soup back in cooler as it was still mostly frozen.

Comments

- Handwashing station fully equipped with hot and cold running water, liquid soap, paper towel
- All coolers, except display cooler measure 4C and below
- All freezers measure -18C and below
- High temperature dishwasher measure 71C and above at final rinse at plate level
- QUAT Sanitizer in spray bottle measure 400ppm
>>> Bucket first measure 50ppm, once staff refreshed the bucket QUAT measure 200ppm.
- Two compartment sink is available
- Temperature logs are in place for coolers, freezers, and hot holding
- No hot holding at time of inspection
- No signs of pests
- Staff has valid FOODSAFE equivalent
- General sanitation is good.
- Permit is posted

Note:
- Once all the food has been removed from the display cooler, ambient temperature managed to drop to 5C.
>>> Please tightly monitor the cooler. Please see if the technician can adjust the base temperature to below 4C with proper defrost cycles. As this is a cooler that is constantly being opened and closed, it needs to be able to consistently be able to maintain 4C and below.
