Comments

- Hot chicken in hot holding unit is at 60C or hotter - good! Do not overfill and keep covered to keep hot.
If needed, provide another hot holding unit.
- Hot holding steam table - temperatures good (>60C).
- Cold holding - lettuce - is at about 4C - ok. Reminder to clean and sanitize the metal pan used to mix dressing frequently as per your sanitation plan.
- Hand washing - keep soap at back hand sink (until wall dispenser is repaired). Provide the correct type of paper towels in the front area dispenser (or provide a countertop paper towels dispenser).
- Walk in cooler - keep temperature records and make sure you know when defrost cycle is on. Today, air temperature is above 4C but food temperature is below 4C - check again in 1 hour.
- Keep food safety plan on site and keep temperature records for coolers and hot holding.
- Premises is very clean. Cleaning is being done on a routine basis - great! Continue to follow a written routine cleaning schedule.
- Continue with licensed pest control and monitor for pests.
