Observation (CORRECTED DURING INSPECTION): Pizza toppings (cut vegetables, sliced meats, shredded cheese) in prep cooler noted between 0-10.6C at the time of inspection. Items were added to prep cooler for the lunch rush. Operator moved items to the walk-in cooler at 4C or below. Foods stored in the prep cooler must be time-stamped for 2 hours until the unit is capable of maintaining ambient air temperature at 4C or below.

A dilute chlorine solution can be made using 1/2 teaspoon of 5.25% unscented bleach to 1 liter of water. Solution can be made fresh daily, applied to a clean surface, and allowed to air dry.
