Exhaust hood is due for a professional cleaning, however, regular cleaning of the filters, surfaces in the hood need to be done. - Coolers were 4 C or colder - Freezers were - 18 C or colder - Hand sink had liquid soap, paper towel, hot and cold water - Sanitizer buckets had 200 ppm quat. Ensure to make up buckets at the start of the shift - Dishwasher upstairs had a final rinse of 85 C on the gauge, and 76 C at the plate - Dishwasher downstairs had a final rinse of 180 F on the gauge and 71 at the plate - No signs of pest infestations noted during the inspection, only a couple fruit flies noted in the back storage area - General sanitation is good other than in the previously noted areas.
