Observation:
Dishwasher is not reaching the minimum temperature on the gauge. Min/max probe thermometer read at 60C maximum however cycle is not operational even after warming up for 40+ minutes.
Corrective Action(s):
Do not use the kitchen until the dishwasher is repaired.

Observation:
- Broken freezer - unit is turned on but ambient temperature at 15.4C. Door rubber seal is disintegrating. Operator states they are awaiting for parts.
- Caulking becoming mouldy and peeling off between the sinks and the wall.
- Dishwahser was turned off for awhile as per the operator and minimum temperature noted in the gauge is not being reached after warming up for 30+ minutes. Dishwasher cycle is not operational and no staff knows how to manuever the machine.
Corrective Action(s):
- Post a sign on the freezer door to prevent people from using it. Repair the unit as soon as possible. "OUT OF ORDER" sign was posted at the freezer door at the time of inspection.
- Redo the caukling in a month.
- Repair the dishwasher. Date to be corrected by: 15-JUL-2022

Comments

Premises is an approved kitchen that is primarily used for private event kitchen rentals. Please ensure applicants to have temporary food permits for private events.
Handsink is fully equipped.
QUAT sanitizer in spray bottles measured at 200ppm. (Ensure to mix 6mL of QUAT concentrate with 1L of water to reach 200ppm).
Stand up cooler at 4C or below.
General sanitation is good.
Vent hood in sanitary condition.
Pest monitoring by ORKIN monthly. No reported pest activities as per the operator.

Dishwasher cycle is not operational and is not self-completing. Discontinue all kitchen rental/use until the dishwasher is serviced and is able to reach 71C or above plate level during the final rinse. Next scheduled rental is July 23, 2022 as per the operator.
