Observation (CORRECTED DURING INSPECTION): Front upright cooler was noted with an air temperature of 10.2C. 5 blocks of feta cheeses were noted with internal temperature of 9.4C (lowest temperature attained) and a container of sliced tomatoes was noted with an internal temperature of 9.5C.
Corrective Action(s): **Issue corrected during the inspection** Operator discarded the 5 blocks of feta cheeses and container of sliced tomatoes during the inspection. No other cold potentially hazardous food was stored in this cooler after the abovementioned items were discarded.

Observation: Mouse droppings (lots) noted in numerous areas:
- In most of the black cabinetry units below the donair machines and rice cookers.
- Floor beside the front upright cooler.
- Floor below the prep table.
Corrective Action(s): Sweep, clean and sanitize ALL areas noted with mouse droppings. After cleaning, please monitor all areas for the reoccurence of droppings. This will be assess during the follow-up inspection. If more droppings are evidenced during the follow-up, operator will have to hire an external pest control company.

Observation: Multiple areas in the facility noted to be poorly organized which may lead to potential hiding/ harbouring areas for pests.
Corrective Action(s): Organize all utensils, equipment, food, etc. in the facility to eliminate all possible harbourage areas for pests.

Routine inspection conducted today:
Handwash stations, including staff washroom, accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units (except for front upright cooler) were holding food at 4.0C or below.
All freezer units were holding food at -18C or below.
Hot hold units were holding food at above 60C.
QUAT sanitizer spray bottle available - 400 PPM QUAT detected.
Drain plugs available for the 3-compartment sink for manual warewashing.
Mop bucket was emptied and not in used.
Operator renewed his FOODSAFE level 1 equivalent certificate - Exp. July 2028.
