Observation (CORRECTED DURING INSPECTION): Dry storage food items observed to be uncovered (bags open). Repeat violation.
Corrective Action(s): It was discussed that dry storage items are to be stored in food grade containers with lids that are easy to close if it is not feasible to reseal food bags after each use. All food must be properly covered to protect from potential contamination at all times.

- Freezers at -17 to -18 degrees C.
- Hot holding internal food temperatures at 60 degrees C or more.
- Sushi rice pH at 4.0.
- Hand sinks supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- High temperature dishwasher measured 71 degrees C or more at the utensil surface during the final rinse.
- Bleach water sanitizer available in labeled spray bottle at 200 ppm chlorine.
- Prep sinks, ware washing sinks supplied with hot and cold running water.
- No signs of pest activity observed during inspection.
