SUSHI BAR/SERVERY:
-Handwash station adequately supplied.
-Refrigeration temperatures within requirement; Hot-holding temperatures within requirement.
-200ppm chlorine solution available in a labelled spray bottle.
-Sushi rice had pH 4.0.
-Knives/utensils stored in ice with lemon wedges.
-General food storage practice and sanitation satisfactory.

KITCHEN/STORAGE ROOM:
-Handwash station adequately supplied.
-Refrigeration temperatures within requirement; Hot-holding temperatures within requirement.
-Temperature monitoring system in place.
-High temperature dishwasher achieved 72.1'C at the plate level after final rinse.
-200ppm chlorine solution available in a bucket below dishwashing sink.
-Tools/equipment maintained in sanitary condition.
-Ventilation canopy hood due for cleaning. Company already contacted. OK.
-Storage room satisfactory. No evidence of pest activity observed.
-Washroom handsinks satisfactory.
-General maintenance and sanitation satisfactory throughout. Clean behind deep fryer on a more regular basis.
