- Required cleaning has been completed. Continue to maintain a high level of sanitation. Remember to pull out equipment and ensure the walls behind the equipment as well as the floor along the perimeter of the wall under the equipment are cleaned. - No food preparation/handling taking place at time of inspection. Premise is not open. Operator on site to do some administrative work. - Discussed proper reheating procedures. Ensure hot holding unit is preheated. Curries should be reheated on stove to minimum 74C then transferred into preheated hot holding unit at 60C. - Discusses proper use of sanitizer. Ensure sanitizer solution is made fresh daily upon arrive and before any food handling commences. Sanitizer solution should be readily available in all food preparation areas (front drink making area and back kitchen). Keep all wiping cloths stored in sanitizer solution when not in use to prevent microbial growth. Change sanitizer throughout the day to ensure minimum concentrations are maintained. - Reviewed pest control report. Follow all recommendations made by pest control technician. Monitor for new activity and report to pest control technician. - Back door screen has been replaced so that it completely fits over the open back door. - Tape has been removed from freezer door, plastic has been removed from spray nozzel, proper scoop for rice has been obtained.
