Observation:
Hand sink near walk-in cooler is not flushed against the wall. This may allow water damage behind the sink potentially leading to mould growth.
Corrective Action(s):
Either install the hand sink against the wall or place a sealed board behind the sink so there is no gap between the back of the sink and wall.

Observation:
Inside of dishwasher (propellers and doors) require cleaning due to accumulation of food debris and grime.
Correction:
Clean inside of dishwasher to ensure dishes are able to be cleaned and sanitized properly as well.

Adequate handwashing stations not available for employees [s. 21(4)]
Observation:
1. Hand washing station upon kitchen entry did not have liquid soap or paper towels.
2. Hand washing station by walk-in cooler was not functional due to a pipe leakage issue, and did not have paper towels.
3. Hand washing station in dish washing area was completely blocked with container lids and was inaccessible.
Correction:
Ensure all hand washing stations are fully equipped with liquid soap, paper towels and hot/cold running water. All hand washing stations need to be easily accessible at ALL times.

Violation corrected for hand washing station upon entry and dish washing area.
Follow up required for hand washing station by walk-in cooler due to a water leakage issue. Plumber was present at the time of inspection.

Observation:
Inside of high temperature dishwasher has still not been cleaned since Routine Inspection on Friday November 5, 2021. Propellers and inside of dishwasher has heavy accumulation of food debris and grime.
Correction:
Clean and sanitize inside of dishwasher. CLEANING MUST BE COMPLETED TODAY BEFORE PLACING ANY MORE DISHES IN DISHWASHER.

Observation:
1. Hand washing station near walk-in cooler lacks paper towels and hot/cold running water. Hand sink plumbing issue has still not been fixed since Routine Inspection on November 5, 2021.
2. Hand washing station in dishwashing area was still blocked by a stack of container lids. Person in charge did not know there was a hand sink present there as it was heavily blocked. This sink also lacked liquid soap and paper towels.
3. Dispenser for liquid soap is broken off of hand washing station located upon kitchen entry.
Correction:
1. Repair hand sink so there is hot and cold running water, and the sink is fully equipped with liquid soap and paper towels in a dispenser.
2. Remove lids from hand washing sink in dishwashing area. This was completed at the time of inspection. Ensure sink is fully equipped with liquid soap and paper towels in a dispenser.
3. Install new liquid soap dispenser at hand sink by kitchen entry.

Follow-up Inspection:
Hand sink near walk-in cooler has now been repaired.
All hand washing stations fully equipped with liquid soap, paper towels and hot/cold running water.
All food items are covered and stored off the floor.
Concentration of QUAT sanitizer in spray bottles = 200 ppm. Spray bottles available in front dining area and in kitchen.
High temperature dishwasher sanitizing with 73.7 degrees Celsius at dish level after final rinse cycle. This temperature was reached after the second attempt.
Dishwasher and dishwashing area has been cleaned.
General sanitation and organization of facility has significantly improved, especially for:
- Shelving units
- Outside of food storage containers and equipment
- Hard to reach areas
- Underneath shelves and equipment

REMINDERS:
- All hand sinks must be fully equipped with liquid soap and paper towels in a dispenser, and easily accessible at all times.
- Review and monitor proper hand washing methods with all staff regularly.
- Review and follow your sanitation plan for daily and weekly cleaning.
- Ensure a sanitizer spray bottle is available for the dining tables and in the kitchen.
- Do not use take out containers as scoops for dry products (e.g. flour). Use proper and designated scoops.
