Observation: High temp dishwasher blocked by shelving - cannot be checked. Operator stated she washes her equipment in 2 compartment sink, but could not describe all three steps (wash, rinse and sanitize).
Corrective Action(s): Clear area in front of dishwasher so it is easily accessible. Do not block dishwasher. Dishwasher must be ready for follow-up inspection.

Observation (CORRECTED DURING INSPECTION): Back handwashing station does not have paper towel.
Corrective Action(s): Handwashing station must be stocked with soap and paper towel, and hot and cold running water at all times.

Observation: Operator has added potato stuffed bread and pickled vegetables to menu.

Layout has changed again:

- upright glass cooler removed
- silver domestic cooler/freezer added
- shelving blocking dishwasher
Corrective Action(s): Facility must not undergo anymore layout changes without prior health approval as it is barely able to contain all food needed for operation. Should the disorganization continue, the menu will be reduced to a manageable level.
