Monitoring logs are not being maintained for neither the bar or the kitchen. Maintaining logs is important as it demonstrates the premises is doing its due diligence especially in the event of a food borne illness complaint.
***Provide information on how you determining the shelf stability of sauces observed inside the walk in cooler that have been made in house. Some observed were dated 1 month ago.
