Observation: Workers were hosing down the processing room with water. No evidence of sanitizers being used. When asked, the worker stated that they mix detergent with sanitzer for cleaning food contact surfaces. This is contrary to proper cleaning and sanitizing procedures.
Corrective Action(s): Ensure workers are aware of and are implementing proper cleaning and sanitizing procedures for food contact surfaces, even when managers are away. Post instructions outside the room.

Observation: Droppings were noted in the warehouse. Pest control service has caught mice in the building. Gaps noted under the front door to the office and under the loading bay doors. One loading door was left open.
Corrective Action(s): Continue with pest control. Remove droppings and monitor. Keep doors close. Close the gaps under doors, replace seals.

Comments

Routine inspection of the warehouse and the processing room.
Temperature of the processing room was 8C. The part of the room closest to the door is dedicated to cutting of frozen tuna. Meat (pork, beef, chicken) are processed in the other room separated by a wall.
Production had finished for the day and staff was cleaning the room.
Operator was able to show completed cleaning records from previous days. Verify with staff that proper procedures are indeed being followed.
Handwashing stations were stocked with soap and paper towels.
