Observation (CORRECTED DURING INSPECTION): Low temp chlorine dishwasher not dispensing any sanitizer.
Low temp dishwashers must dispense at least 50ppm chlorine for final rinse cycle on plate surface to achieve adequate sanitization.
Do not use the low temp dishwasher; call in a mechanic to fix it and in the meantime use the 3 compartment sink. First wash the dishware with soap and water, then rinse with warm water, then dispense into sanitizer solution and let air dry for atleast 2 minutes.
