Observation (CORRECTED DURING INSPECTION): Cream-based sauces sitting in top prep cooler at >4C. These sauces are typically in the danger zone (4-60C) for longer than 2 hours. Operator placed these sauces in a cooler operating at </= 4C.
Corrective Action(s): Operator to obtain lids for potentially-hazardous foods and fill containers only half-full to maintain temperature of potentially hazardous foods at </= 4C.

Observation: Various areas showed an accumulation of debris and/or grease, including: underneath equipment and countertops in grill line area, coolers/freezers doors and handles, and the tops of food containers

Observation (CORRECTED DURING INSPECTION): Sanitizer spray bottle had 100 ppm Quats solution. 200 ppm Quats solution is required to sanitize food contact surfaces (reduce the number of pathogens to an acceptable level). Operator emptied the spray bottle and refilled with fresh Quats from the dispenser.
Corrective Action(s): Change Quats solution in spray bottles at least weekly.
